🥗 Muffaletta, Made Lighter (And in 20 Minutes)

Hi! It's Fat Tuesday!

It took some testing to turn a proper muffaletta into something lighter without losing what makes it good. The olive salad has to lead, the bread has to absorb flavor, and the seasoning needs to build in layers.

So I made two recipes.

First, a Homemade Muffaletta Olive Salad that comes together in 20 minutes with grocery store ingredients. Crush the olives, use the brine, and let it rest.

Then there’s the Muffaletta Salad. Dress the bread first, then again after the meats, and finish with the olive salad. That layering keeps it seasoned like the original without weighing it down.

If you’re cooking for Fat Tuesday, this is an easy way to do it right.

I'd love to hear which one you make or if you try them both!.

Hey there, Is anyone else experiencing weather whiplash? We had a skiff of snow earlier this week, and now they're forecasting high 60s for the weekend. While the weather can't make up its mind, I've been gravitating toward recipes that work no matter what's happening outside. These shrimp tacos bring brightness to the table even when the sky can't decide between winter and spring. Reader Favorites: Salt and Pepper Shrimp Tacos (dozens of 5-star reviews!)
