☕️ Bite-Sized Sundays: A New Orleans dinner at home, starting with 45-minute Red Beans and Rice

Happy Sunday, Friends.

This week: A New Orleans dinner two ways, one for a weeknight and one for company.

At the famous, though very affordable, Liuzza's by the Track in New Orleans, we ordered more than we could eat: Gumbo, étouffée, shrimp remoulade (I don't want to admit the whole list!). The dish I thought I'd be least impressed with was the red beans and rice, and it's the one that impressed me the most. I came home and made it my own (made in 45 minutes flat with canned beans and andouille sausage).

The simplest way I serve it is on a weeknight, with Skillet Cornbread and a Little Gem Salad. The beans are rich, and the salad's tangy dressing offsets that.

For a small dinner party, I add a few things. I have a rule that every guest has a drink in their hand, not necessarily alcoholic, within the first few minutes of arriving. It makes people feel welcome and puts them at ease. A French 75 is my pick for this menu, and Praline Pecans are out the second people show up. Then we start with Shrimp Remoulade.

Hey there, Enchiladas might be the most useful dinner I make. They're a Sunday dinner that turns into a week of lunches, a make-ahead when people are coming over, and about the easiest thing to carry to someone who needs a meal. The no-break secret: fry each corn tortilla in hot oil for 10 to 15 seconds per side before you roll it. It makes them pliable, adds a toasty corn flavor, and keeps them from getting soggy in the sauce. 🌟 Recipe of the Week: Cheese Enchiladas Melty cheese wrapped in...

Happy Sunday, Friends. This week: Five dinners that are quick to make and high in protein. "One cannot think well, love well, sleep well, if one has not dined well." - Virginia Woolf I think about protein at dinner more than I used to, maybe you do too? Not as a diet. I just want a dinner that keeps me full. These five all have 25g or more per serving, and none takes more than 45 minutes. These recipes are fast because they use everyday ingredients and efficient techniques: quick sears, cuts...

Hey there, Over the years, I've posted a whopping 7 versions of piccata (the shrimp version is the one I make the most). What they all share is the sauce: butter, fresh lemon juice, capers. Almost everyone loves it, and it goes with just about anything savory. It always feels a little fancy, but it comes together very quickly. So I decided to develop a recipe for just the sauce. Now you can 'piccata' anything you want, from steamed vegetables to mashed potatoes to rice. 🌟 Recipe of the Week:...
