πŸ₯œ The cookie Nora Ephron emailed a bakery about (NEW video)

Hey there,

When Nora Ephron tasted the Peanut Butter Sandwich Cookies at Seattle's Dahlia Bakery, she didn't just enjoy them. She emailed Tom Douglas to tell him they were her all-time favorite cookies and to ask for the recipe. He sent it, along with a big package of cookies, and later asked if he could name them after her in the Dahlia Bakery cookbook. Her answer: "Are you kidding me? This may be the greatest cookie ever ever ever."

She wasn't wrong. The creamy peanut butter filling between two crunchy peanut butter oat cookies is what makes them.

Watch every step, from mixing the filling to pressing the sandwiches together. One heads up: the dough and filling both need a couple of hours in the refrigerator, so this is a start-in-the-afternoon, bake-before-dinner kind of cookie. Perfect weekend timing.

Pro Tip: Scoop all 48 cookies onto one parchment-lined baking sheet before chilling. They can sit close together (just not touching) since they won't spread until they bake.

Until Sunday,

Peanut Butter Sandwich Cookies
